Our Journey

Our journey began in 2007 when we relocated to Wales, lacking any prior restaurant experience. While cooking delicious home-cooked meals was familiar, venturing into the competitive world of commercial restaurants in the UK, with its rich culinary diversity, posed a daunting challenge. Indian cuisine, often generalised and Westernised, dominated the scene, with familiar dishes like Chicken Tikka Masala and Saag Aloo taking precedence.
 
In this landscape, we pondered how to carve out a niche for authentic Indian home cooking that stayed true to its roots and resisted Westernization. The dilemma arose: conform to the established norms with stereotypical décor, extensive menus, and familiar dishes, or take a daring leap by introducing genuine recipes, traditional spices, and an ambiance reminiscent of an Indian home rather than a typical restaurant.
 
Opting for the latter, we embarked on what many deemed a risky endeavor, exacerbated by our decision to set up in Fairbourne, an unconventional location for a restaurant, let alone one specialising in authentic Indian cuisine Before long, the adage “If the food is good, people will find you and travel any distance for it” rang true. Word of mouth spread like wildfire, drawing patrons from various corners and backgrounds who not only became loyal regulars but also fervent advocates, recommending us to all they encountered. Our dedication to upholding the trifecta of hard work, passion, and honesty bolstered our credibility and reputation significantly. Indian cuisine transformed into a local landmark, solidifying our place in the culinary landscape.

Raj and Noorie have become synonymous with excellence in the community, delighting Wales and its visitors for the past 16 years. Their remarkable journey began with a small Indian restaurant in a coastal village and has evolved into a grand establishment featuring a unique bar and food offerings, a cozy lounge complete with a fireplace, a lavish snooker room full of character, a spacious outdoor patio with barbecue facilities and breathtaking views, and of course, an acclaimed authentic Indian restaurant providing an elegant dining experience. Located in a dreamy setting, they have consistently upheld their belief that passion, hard work, and honesty are the keys to success, earning them an impeccable reputation and adoration from all corners. Raj and Noorie, with her expertise as head chef and his flair for front-of-house management, have carved out a niche for genuine Indian dining experiences, where the aroma of love and passion for food permeates alongside heartfelt hospitality. Whether it’s their Bar Chaska or the Indiana Cuisine restaurant, guests are warmly welcomed into an atmosphere brimming with warmth. Together as a formidable team, their latest venture in this new location has allowed them to expand and innovate, offering a unique experience not only to Wales’ visitors but also to the local community.
